Yacon syrup is a healthy alternative to sugar that can be used in baking and cooking and even added to smoothies or other drinks. I did some research and found that this is due to the fact that its sugar contains high levels of oligofructose (inulin), a form of sugar that is not metabolized very well by the human body.
