Pompeian Olive Oil REVIEW & Roasted Garlic and Parmesan Pasta with Olive Oil Recipe

I am actually a BIG fan of Olive Oil or "E.V.O.O" as I like to call it.  I use it in a lot of recipes!  I first started using it as a replacement for regular vegetable oil and then as we discovered our son was allergic to dairy products, I started using it as a replacement for butter as well.  I actually find myself using Olive Oil quite a bit now.  So I was excited to try Pompeian Extra Virgin Olive Oil which sounded delicious with it's description!  I was able to receive a pack of Pompeian Extra Virgin Olive Oil, a cute retractable measuring spoon, and a Walmart gift card to purchase supplies for making my very own meal using the new Olive Oil.

Before deciding what to make, I instantly grabbed some Artisan bread and take a taste of the new Pompeian Olive Oil I had received.  It did have a great robust taste and fragrance just as described.  I loved the fresh, vibrant taste and smell and was very pleased.  I decided I would plan a recipe that would truly show off the Pompeian Olive Oil and not simply hide the taste among other ingredients.  I decided on a simple and quick Roasted Garlic and Parmesan Pasta with Olive Oil.  Here is what you will need for the dish...
Roasted Garlic and Parmesan Pasta with Olive Oil

1 Large Head of Garlic, or 20-25 Whole Cloves of Garlic, peeled
1/3 cup, plus 2 tablespoons Pompeian Extra Virgin Olive Oil, divided
13 ounces Spaghetti (I use the Barilla Plus enriched Spaghetti)
2 tablespoons, plus 2 teaspoons Kosher Salt, divided
3/4 cup Parmesan Cheese, divided (I love the fancy Costco stuff)
1/2 teaspoon Crushed Red Pepper Flakes
1/2 cup Freshly Chopped Parsley

1. Position rack in upper third of oven and preheat to 350 degrees F. Place garlic cloves in a small, ovenproof pan and drizzle with 2 tablespoons of the Pompeian Extra Virgin Olive Oil. Toss to coat evenly. Place pan in oven and roast until garlic is light golden brown, about 15 minutes.
2. Meanwhile, bring a large pot of water to a boil. Add 2 tablespoons salt and cook pasta until al dente. When the pasta is ready, reserve 1 and 1/2 cups of the pasta cooking liquid for use later in the recipe. Drain remaining water, then set pasta aside, tossing it with a bit of the Pompeian Olive Oil to prevent noodles from sticking toghether (I do this whenever I make any type of pasta).
3. When garlic has finished roasting, transfer the cloves and any oil left in the pan to a food processor or blender. Add 1/4 cup of Parmesan, then pulse a few times to combine. With the food processor or blender running, slowly pour in the remaining 1/3 cup Pompeian Olive Oil and blend until mostly smooth.
4. Heat a skillet large enough to hold the pasta over medium. Add the garlic –olive oil mixture and red pepper flakes. Cook for 30 seconds, then add the reserved pasta cooking liquid. Bring to a boil, then lower the heat and add remaining 2 teaspoons salt. Simmer for 5 minutes, until reduced by about 1/3.
5. Add reserved pasta to the skillet and toss to coat. Remove pan from heat, add remaining 1/2 cup parmesan cheese and parsley, then toss well. Allow the mixture to rest for 5 minutes so that the noodles absorb the sauce. Serve warm topped with additional Parmesan.
It's delish!  It shows off the great flavor of the Pompeian Olive Oil and is so fresh and yummy!
